Understanding Antioxidants and Their Ability

A wide variety of foods contain antioxidants. But what they are, how they’re measured and how they relate to health is a question on a lot of people’s minds. An antioxidant is a molecule capable of slowing or preventing the oxidation of other molecules. Oxidation is crucial for life but it can also be damaging. As oxidation occurs, free radicals are produced which start a chain reaction that damages cells. It is believed that free radicals may be involved in Parkinson’s disease, schizophrenia, cancer, heart disease and Alzheimer’s disease. And it’s said that free radicals underlie the aging process itself. The goal with antioxidants is not to remove oxidants entirely, but instead to keep them at an optimum level. Antioxidants terminate the chain reactions caused by free radicals by removing free radical intermediates and inhibiting other oxidation reactions by being oxidized themselves. Antioxidants are widely used as ingredients in dietary supplements in hopes of maintaining health and preventing ailments like cancer and coronary heart disease.

Oxygen Radical Absorbance Capacity (ORAC) is the current industry standard for assessing antioxidant strength of whole foods, juices and food additives. In 2007, scientists with the United States Department of Agriculture published an updated list of ORAC values for 277 foods commonly consumed by the U.S. population like fruits, vegetables, nuts, seeds, spices, grains, etc. The values were reported as micromoles of Trolox equivalents (TE, vitamin E derivative) per 100 grams both for lipidsoluble (“lipophilic” as for carotenoids) and water-soluble (“hydrophilic” as for phenolics) antioxidant chemicals in foods. The sum of lipophilic and hydrophilic values produces a food’s total ORAC value. A newer standard for assessing antioxidant strength is the S-ORAC, Super ORAC, test which uses the super oxide radical. Superoxide is the most dangerous and abundant free radical. Elevated superoxide levels are linked to heart disease, cancer, arthritis, asthma and other inflammatory conditions. Most high ranking ORAC substances will get very low S-ORAC scores, not Genesis™, which consistently outperforms the competition.
